These delicious, and nutritious black olives are the same we use for our premium extra virgin olive oils, hand-picked from our own gardens, naturally cured for more than 5 months with a low salt brine to enrich your balanced diet.

Olives are a great source of antioxidants, vitamins (A, C, E, K) fibers, protein and healthy fatty acids;  ideal for healthy snacks, or just to add next to any meal to make it more filling. 

Ingredients: Pitted black olives, salt, maize oil.

No conservatives or additives.

You might be wondering, what is the difference between the ones you buy in the market and Palamidas?

The answer: Most probably, a lot.

Check if your black olives are flat or wrinkled. If wrinkled, you're probably in good hands, if not, they are selling you dyed green olives.

Why?

As green olives ripen, they turn black. As they ripen, they lose their water content, and their skin starts to become softer. It is difficult to handpick blackened (ripened) olives as they are prone to damage much easier. So it is hard work, more time and effort to pick blackened olives. 

Olives need to be cured before eating as they have very strong tannins. (Tried anyone? We did, it takes two hours for your palate to come back to normal:) ) Natural curing is done with salty water, using the power of osmosis which takes a long time, minimum 3-4 months. Time is money, right?

So after the natural way of curing olives, submerging in salty water for months, the bitterness of the olives comes out together with the remaining water in the olives, resulting in wrinkled olives

Some producers, take the short-cut.

They get the green olives, much easier than the black ones, submerge them in chemical solution, et voilà, bitterness out in a day or two. However, now olives are in chemical solution, not good. So they need to be totally cleansed before they can be sold.

The result: Tasteless but smooth black olives, that are cheap.
